classic pancakes

Ingredients

1 1/2 cups all-purpose flour

3 1/2 tsp baking powder

1 tsp salt

1 tbsp sugar

1 1/4 cups milk

1 large egg

3 tbsp unsalted butter, melted (plus extra for cooking)

1 tsp vanilla extract

Directions

1. Mix dry ingredients in a large bowl.

2. Mix wet ingredients in another bowl.

3. Combine wet ingredients with dry ingredients and stir until just combined.

4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter.

5. Pour about 1/4 cup batter per pancake onto the skillet.

6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

7. Flip and cook another 1-2 minutes until golden brown.

8. Stack and serve with maple syrup, butter or your favorite toppings.

9. Enjoy!
