Ingredients

2 cups all-purpose flour

2 tbsp cornstarch

1 tbsp sugar

1 tbsp baking powder

½ tsp salt

2 large eggs (separated)

1¾ cups milk

½ cup melted butter (or neutral oil)

1 tsp vanilla extract

Instructions

1. Preheat your waffle iron.

2. Mix dry ingredients:
Flour, cornstarch, sugar, baking powder, salt.

3. Mix wet ingredients (except egg whites):
Egg yolks, milk, melted butter, vanilla.

4. Combine wet + dry:
Stir until just combined. A few lumps are fine.

5. Whip the egg whites:
Beat until soft peaks form. This step makes the inside light instead of dense.

6. Fold egg whites into batter:
Gently—don’t overmix or you’ll lose the air.

7. Cook until deeply golden:
Slightly longer than you think. Pale waffles = soft waffles.
